4 ingredient breakfast skillets

The line between breakfast and lunch to me is a thin, almost transparent one. Honestly, I would eat anything for breakfast that I would also have for lunch and dinner because really, I just want to eat good food, no matter what the time of day is. Or maybe you're like me and don't make breakfast until 10:30.... 11 am... and then by the time you're eating it might as well be called brunch or lunch.

Regardless. 

Skillets are the best thing to make in the fall for any meal in the day. 

They are warm and delicious and make you feel satisfied and cozy all at the same time. 

So the two key components in any skillet are a protein and a fiber to keep you full. My go-to protein is a chicken sausage like Aidell's chicken apple sausage, an egg, bacon or turkey bacon. Great sources for fiber include sweet potatoes, apples (both with the skin on and washed), and dark-colored veggies.

Skillets are super versatile and I love to just use what I already have in my fridge and pantry. If you have spinach/spring mix on hand, always feel free to use a couple handfuls because it will wilt down to just about nothing in the skillet, but you still get the nutrients.

Here are a couple time and money-saving tips for ya 

Buy the Aidell's chicken sausage from Costco. Saves you money and you get 4 packs in one (I like the chicken apple flavor). Aidell's is great because there's no filler, unnecessary ingredients, or added sugar. Just goodness! It's also whole30 certified as well if you're doing a whole30. 

Roast your sweet potatoes ahead of time, and you can use them for this and another meal or two. 

The best way to prep sweet potatoes is to wash first and then chop them into bite-sized pieces and spray with coconut or avocado oil. I sprinkle cinnamon on mine because I think cinnamon should always go on sweet potatoes. *Chosen Foods makes a great spray avo oil you can buy at the store.

Try not to use Pam or another spray canola or vegetable oil, because those oils are highly processed, highly oxidized, and can be very inflammatory in your body.

Roast potatoes in the oven on 400 for about 45 minutes. When I made this for breakfast the other day, I started my sweet potatoes around 8 am, threw them in the oven, and literally forgot about them for an hour while I went outside on my deck to do my morning reading until I smelled them through the screen door. Oops

Either way, they're pretty difficult to mess up unless they're burnt black. 

Okay, now for the technical part, since you probably skipped down to this section anyways. Feel free to just use these as inspiration and add or take out whatever you want. Let's do it.

Apple Bacon Sweet Potato Skillet

Servings: 2

Ingredients

1 apple, chopped

3 slices of uncooked bacon, cut into 1-inch pieces

2-3 medium sweet potatoes, chopped

Cinnamon

Trader Joe's Everything but the Bagel Seasoning (optional)


Directions

1. (skip if your potatoes are already roasted) 

Preheat oven to 400 degrees. Chop your sweet potatoes to bite-sized pieces, place on a sheet pan with parchment paper, and spray with coconut or avocado oil. Sprinkle with cinnamon. Roast in the oven for about 45 minutes.

2.) When sweet potatoes are almost done, throw your bacon in the skillet and cooked through. Remove your bacon and pour out the grease in the trash, reserving about a tablespoon of bacon grease in the skillet. 

3.) Add your apples to the skillet and cook for 5-10 minutes on medium heat. Add your sweet potatoes and bacon back to the skillet and toss. 

4.) Sprinkle everything but the bagel seasoning on top of your skillet and add a fried egg for extra protein and deliciousness.

Chicken Apple Sausage Skillet Hash

Ingredients

2 medium-sized sweet potatoes

1 or 2 chicken apple sausages (I used Aidell's)

1/2 apple, chopped

1 egg (optional)

Spray coconut or avocado oil

Cinnamon


Directions

1. Preheat oven to 400 degrees. Chop your sweet potatoes to bite-sized pieces, place on a sheet pan with parchment paper, and spray with coconut or avocado oil. Sprinkle with cinnamon. Roast in the oven for about 45 minutes.

2. Once sweet potatoes are done or almost done, throw your chopped apples in a skillet on medium heat. Allow to sizzle for a couple minutes and then add in your sliced chicken sausage.

3. Make sure your sausage is browning before you flip the slices over to the other side. Once both are browned, add your sweet potatoes to skillet and toss. After a couple minutes, transfer everything to a bowl.

4. Fry your egg in the same skillet and add then add to the top of your bowl. For extra flavor, add Trader Joe's Everything but the Bagel seasoning on top. 

You can make a million variations to this like the two pictures below, and it's an easy, filling meal to recreate over and over again. Goat cheese and hot sauce are always options to add on top to kick the flavor and texture up a notch!
