Summer P E A C H Crumble (paleo, v)

SUMMER. My favorite season. Even though it hits different this year with covid, and our summer plans having to alter, this recipe will be just the thing to remind you that there's still a sweetness to summer. Since we're known for our peaches here in Georgia, I thought this would be the perfect, quick and easy recipe for when you're wondering what to do with all of your peaches from the local farmer's market. 

This recipe will take about 15 mins from start to finish! We love a good quick recipe. The crumble on top of the peaches is so good that you'll probably be taste testing it before it even makes it on top of the peaches. Or maybe that's just me. 

This will make 2 servings, which is perfect if you want to share with someone or save the rest for a treat the next day. You can always double or half to make more or less!

Honestly, when I first made this, I didn't measure any ingredients. Actually, measuring is something I rarely do. They say baking is an exact science and I usually will use a recipe as a guideline if I'm making someone else's, but it seems to always work out for me!

For the sake of everyone else though, I did go back and figure out estimates of the measurements. If you get too much or too little of something though, no worries! It's pretty hard to mess this one up. A tip: if the crumble mixture is too dry, add more melted coconut oil. If you want it to have more of a crumble, add more oats or almond flour.

Another note: I would recommend using a toaster OVEN if you have one, but if not your regular oven is perfect!

Summer Peach Crumble

Serves: 2

Total time: 15 mins


Ingredients

2 Georgia peaches (better when they're more ripe)

1/2 c. rolled oats

1/4 c. almond flour

1/3. c. coconut oil, melted

1/4. c. coconut sugar

2 tbsp. pure maple syrup

cinnamon

Directions

1. Preheat oven to 400 degrees. Chop peaches into small pieces and place into a small glass or ceramic baking dish. Sprinkle peaches with a little coconut sugar and cinnamon. 

2. Mix together oats, almond flour, coconut oil, and remaining coconut sugar, and maple syrup with a spoon in a bowl. You can always add a little more coconut sugar if you think the mixture needs to be sweeter!

3. Crumble mixture on top of peaches, and bake in the oven for 10 minutes. To make the crumble more crispy, you can crack the oven open and turn broil on for a couple minutes. Make sure you keep an eye on it if the broiler is on so it doesn't burn!

4. Remove from the oven and let cool for a couple minutes. Enjoy by itself, with cocowhip, or some ice cream!
